Carrot & Ginger Soup

  • 1 lb carrot, chopped

  • 3 tbsp olive oil

  • 1 small onion, chopped

  • 3 cloves garlic, chopped

  • 1 tbsp ginger fresh, grated

  • 1 tsp turmeric fresh (prefered) or powder

  • 1 tsp cumin

  • 1 tsp cardamom

  • small handful cilantro

  • 1/2 tsp black pepper ground

  • 1/2 tsp kosher salt

  • 4 vegetable stock

Instructions

  • Peel and chop the carrot, onion, garlic, and ginger

  • Saute the onions in oil over medium heat 3-4 min. Then add ginger, garlic, cumin, cardamom, turmeric, pepper

  • Saute everything for another 2-3 minutes over medium heat.

  • Add the vegetable stock, bring to a boil, then simmer 25 minutes.

  • Use an immersion blender to puree the soup

  • Add cilantro and sprinkle salt and blend a few seconds more

  • Serve with hemp hearts, pumpkin seeds, or crushed red pepper if you'd like.
