Carrot & Ginger Soup
Carrot & Ginger Soup
- 1 lb carrot, chopped 
- 3 tbsp olive oil 
- 1 small onion, chopped 
- 3 cloves garlic, chopped 
- 1 tbsp ginger fresh, grated 
- 1 tsp turmeric fresh (prefered) or powder 
- 1 tsp cumin 
- 1 tsp cardamom 
- small handful cilantro 
- 1/2 tsp black pepper ground 
- 1/2 tsp kosher salt 
- 4 vegetable stock 
Instructions
- Peel and chop the carrot, onion, garlic, and ginger 
- Saute the onions in oil over medium heat 3-4 min. Then add ginger, garlic, cumin, cardamom, turmeric, pepper 
- Saute everything for another 2-3 minutes over medium heat. 
- Add the vegetable stock, bring to a boil, then simmer 25 minutes. 
- Use an immersion blender to puree the soup 
- Add cilantro and sprinkle salt and blend a few seconds more 
- Serve with hemp hearts, pumpkin seeds, or crushed red pepper if you'd like.
