Peach and Tomato Gazpacho
Summer Peach and Tomato Gazpacho
This soup is healthy, easy to prepare, and so refreshing. Prepare it as a quick weeknight dinner or starter for your next summer dinner party.
Serves 4
Blend half of the tomatoes and half of the peaches with crushed ice, shallot, half olive oil, half tarragon, salt, until very smooth.
In a medium bowl, add puree to remaining tomatoes and peaches with remaining oil, mirin, pepper, oregano, and remaining tarragon. Add tablespoons of water to reach desired consistency.
- 3 heirloom tomatoes, chopped 
- 3 peaches, pitted and chopped (about 2 cups) 
- 1/4 cup crushed ice 
- 2 tablespoons chopped shallot 
- 2 tablespoons olive oil 
- 1 tablespoon mirin 
- 1 tablespoon fresh tarragon, chopped 
- 1 teaspoon fresh oregano 
- 1 teaspoon Himalayan sea salt 
- 1/2 teaspoon black pepper 
- 1/4 to 1/2 cup water
