Summer Fig Bars

METHOD

Preheat the oven to 400℉. 

  1. Butter a 9-inch square baking pan.

  2. Gently simmer the figs, apple juice, coconut sugar, and lemon in a small pot for 10 minutes. Mash ingredients in the saucepan and let cool.

  3. While the dates simmer, combine all the dry ingredients in a bowl. Add the melted ghee or butter and water. Mix to a crumbly dough with your fingers.

  4. Press half of the dough evenly in the pan. Spread the date mixture evenly over the dough. Sprinkle the remaining dough over the filling to completely cover it.

  5. Bake until lightly browned,  about 20 minutes. 

  6. Let cool and cut into bars.

INGREDIENTS

1 ½ cups chopped figs 

⅔ cup apple juice

¼ cup coconut sugar

1 tablespoon grated fresh ginger

½ teaspoon cardamom

2 tablespoons lemon juice

1 ½ cup almond flour

½ cup ground almonds

½ cup rolled oats

2 tablespoons arrowroot 

½ teaspoon salt

2 tablespoons raw or brown sugar

⅓ cup melted ghee or butter

2 tablespoons water
